The term “galette” in French cuisine holds a special place, representing a variety of flat, round, or freeform crusty cakes or pies. This rustic form of pie is perfect for those seeking Gluten-Free options, as it offers a wonderful alternative to traditional pie crusts. One of the great attractions of making galettes is their formlessness, making them very easy to prepare. If the idea of creating a perfect pie crust seems intimidating, these delightful creations offer the ideal solution.

The adjustments you can consider making include using cold butter instead of Ghee, and opting for an egg wash as opposed to Oat milk. While unconventional, using an egg wash can contribute to achieving a delightful caramel brown color on your dish. Moreover, I utilized Erythritol, a sugar substitute with zero calories and a taste and appearance akin to sugar. These adjustments can enhance the flavor profile and visual appeal of your creation.

GF DF Apple Galett

Ingredients
  

Dough

  • 1 3/4 cup 1 to 1 gluten-free baking flour
  • 1 Tbsp. sugar
  • 1/2 tsp. salt
  • 1/2 cup unsalted butter or Ghee – cold
  • 1/2 cup cold water
  • 2 tbsp. Oat Milk or one egg for egg wash
  • 1 tbsp. Brown Sugar to dust the edges

Filling

  • 3 apples
  • 3 tbsp. lemon juice
  • 1 tbsp. cinnamon or to your taste
  • 3 tbsp. sugar or to your taste

Instructions
 

  • In a large mixing bowl, add the flour, sugar, and salt.
  • Cut the butter into small chunks and add to the bowl.
  • Using a pastry blender or fork, cut the butter into the flour mixture until you have coarse crumbs.
  • Add the cold water and begin to mix together with a fork. Add additional cold water 1 Tbsp. at a time if needed until the dough comes together well.
  • Press the dough into a ball or disc, wrap in plastic wrap, and refrigerate for 30 minutes
  • While the dough is chilling, add apples, sugar, cinnamon, and lemon juice to a large mixing bowl. Set aside until dough is ready.
  • When the dough is ready, lay out one sheet of parchment paper and lightly flour. Place the dough onto the floured surface. Cover the dough with an additional sheet of parchment paper and roll out into a large 12-14 inch circle – or just roll out with a floured rolling pin.
  • Place sliced apples into the center of the dough, then carefully fold up the edges, letting them naturally fold in.
  • Carefully transfer the dough, bottom parchment paper and all, to a baking sheet. Trim the parchment paper so that it’s not hanging over any edges of the baking sheet.
  • In a small bowl, whisk the one egg and brush over the crust edge – sprinkle additional sugar across the entire galette and place into the oven to bake.
  • Bake for 30 minutes, then remove from oven and let slightly cool before serving.
