Balsamic Brown Butter Chicken

A pleasant warm chicken and pasta meal really hits the spot; especially on these cold winter evenings.  Chicken has been on sale so I find I am purchasing a lot of it.  Don’t get me wrong I love this particular protein, and the ways of serving it vary widely. I made this for my daughter and I while my husband was traveling.  It is a very tasty meal and really quite easy to make. Most people would have all these ingredients at home and waiting for them to come together. (You can deglaze with cold water and skip the wine if you don’t have any handy; I think the wine gives it a great depth of flavor that the water does not accomplish.)  It is still a tasty meal either way!  Give it a try and see what I mean.

For this meal you will need;

3 chicken breast cut in half and pounded down to about ¼ inch think

4 Tbs salted butter

1 Tbs Italian seasoning

1 shallot, minced

1 tbs minced garlic

3 Tbs balsamic vinegar

½ cup white wine

2 eggs and 1 tsp water whisked

1 cup flour

1 tsp black pepper

1 tsp garlic powder

1 tsp chili powder

Mix the last 4 ingredients together and set aside in a bowl

In a bowl place the egg wash and flour mixture near each other. Place chicken in the egg wash and dredge in the flour..  Heat a non stick skillet over medium high heat. When the skillet is warm drop in 2 tablespoons of  butter and add the chicken, cooking until browned on both sides remove from the pan.  Cook all chicken (adding extra butter as needed)

Once done you will note all the browned bits stuck to the pan. Deglaze the pan with your wine now by pouring the wine in the hot pan and scrapping the bits up.

Add the balsamic vinegar garlic, minced shallots and additional butter. Allow to simmer until reduced to about ½ of the original liquid.

Finally, add the chicken back into the skillet stir until the chicken pieces are coated with the sauce. Serve on top of a nice bed of fettuccini, make sure to drizzle extra sauce over the top.

  1. OH! Looks tasty!! i will need to try this, but I will leave out the wine because for some reason it makes me sick when I cook with it ;/

    1. Oh that’s to bad, have a nice glass on the side while you are eating it!!
