Then I tried using different cheeses, and also made a ham and cheese variation, all with great success. Today, I made this one and the result was outstanding – the outside is crispy, the inside is cheesy, and it tastes like a chicken pot pie!

You can find tapioca flour on Amazon for a great price. I would recommend Bob’s Red Mill brand. If unable to find tapioca flour, you can also try looking for Arrowroot Flour as that is very similar. Avoid using coconut flour or almond flour – the recipe will not work as those flours are completely different.
You will need a mini muffin pan; my batch made 30 breads.

Vadouvan ~ BRAZILIAN CHEESE BREAD (PÃO DE QUEIJO)
Equipment
- Blender
- mini muffin pan
Ingredients
- 1/3 C extra virgin olive oil
- 2/3 C milk
- 1.5 C tapioca flour or arrowroot
- 2 egg room temperature
- 1 tbsp vadouvan or more – to taste
- 1 block cheddar cheese grated
- spray oil for greasing the cups
Instructions
- Preheat the oven to 400℉
- Grease your mini muffin pan thoroughly
- In your blender or Ninja, combine the milk, egg, oil, cheese and spice until combined.
- Once combined, add the tapioca flour 1/2 C. at a time until all of the tapioca flour has been added.
- Mix well on high, scraping down the sides of the blender so that everything is easily blended. The batter will be thick!
- Scoop the batter into your greased mini muffin tin ~ all the way to the top
- Pop in the oven for 20 minutes or until light golden brown.
