Vadouvan ~ BRAZILIAN CHEESE BREAD (PÃO DE QUEIJO)

Equipment

  • Blender
  • mini muffin pan

Ingredients
  

  • 1/3 C extra virgin olive oil
  • 2/3 C milk
  • 1.5 C tapioca flour or arrowroot
  • 2 egg room temperature
  • 1 tbsp vadouvan or more - to taste
  • 1 block cheddar cheese grated
  • spray oil for greasing the cups

Instructions
 

  • Preheat the oven to 400℉
  • Grease your mini muffin pan thoroughly
  • In your blender or Ninja, combine the milk, egg, oil, cheese and spice until combined.
  • Once combined, add the tapioca flour 1/2 C. at a time until all of the tapioca flour has been added.
  • Mix well on high, scraping down the sides of the blender so that everything is easily blended. The batter will be thick!
  • Scoop the batter into your greased mini muffin tin ~ all the way to the top
  • Pop in the oven for 20 minutes or until light golden brown.
