Asian Chicken salad with spicy ginger dressing

The health payback of cabbage includes  helping with  constipation, stomach ulcers, headache, excess weight, skin disorders, eczema, jaundice, scurvy, rheumatism, arthritis, gout, eye disorders, heart diseases, ageing, and Alzheimer’s disease. So, now you know that the inevitable part of your Chinese dish could do you miracles. Add more and more cabbage in your daily diet, be it your soup or be it your salad, this is going to help you live a healthy and longer life.

 

Chicken Asian Salad will be made again here!!

This is a great Asian dish that in all honesty I did not think would go over so well with the family but they devoured it and want more.  This made enough for leftovers and would be great for a take to work lunch.  The next day it had soaked up the flavour of the homemade sauce and still had a crunch to the cabbage.

 

You will need 3 boneless skinless chicken breast

1 medium-sized cabbage (napa or savoy) thinly sliced

3 carrots shredded (I purchased a small bag pre shredded)

2 medium tomatoes thinly sliced and then slice again

1 mango thinly sliced

1 bunch of green onions

1 package fresh mint (1/2 cup fresh) chopped

1/2 cup cilantro chopped

1/3 cup roasted peanuts (I threw in a bit (bunch) more =)

for the dressing you will need

5 tsp fresh grated ginger (ginger is expensive nad can spoil between uses, put it in a zip lock bag and freeze it grates wonderfully)

2 tbsp chili sauce

4 tbsp brown sugar

4 tbsp rice wine vinegar

2 tsp soy sauce

1/4 tsp sesame oil

5 tbsp vegetable oil

 

Pouch the chicken by placing in a pan covered in water and boiled until cooked through about 6 minutes. Drain and allow to cool.

once cooled shred the chicken with two forks or with your hands.

In a large bowl mix together all the ingredients for the spicy ginger dressing, whisking together.

add the cabbage, chicken, carrots, tomato, mint and cilantro to the large bowl, toss to cover all the vegetables and chicken. Top with the mango and roasted peanuts, garnish with the green onion and serve.

 

This was filling and delicious!
