Poor Mans Pie ~The Kids love it!

Well tonight we have several of MacKenzie’s (Our 12 year old daughter) friends staying for the night.  Sooo instead of the Scallops I wanted to make we will be making a traditional Irish Dish.

When I was younger my mother called this “poor man’s pie” a better known name would be “Sheppard’s Pie”.

I know this is a great crowd pleaser with the kids and adults.  So what you need (for my adaptation) LOL

Potatoes ( I use two medium per person)

Diced onions about two large

Ground beef (90% or higher)

Jimmy Dean Maple Sausage

1 Pack of Brown gravy Mix

Frozen corn and peas (1 each small bag)

1 Stick of Butter

Chopped garlic (to taste)

2 eggs

¼ cup sour cream

2 bags of cheese (I use three cheese pizza blend and a sharp cheddar)

Salt, pepper, basil or dill, Garlic powder

First cut the potatoes into small bite size pieces and boil with salt.

In a pan throw in a tsp of butter and sauté the onion with salt and pepper until just caramelized.

Add the sausage, and bear down on with the back of a spoon to cook and break up once it has been cooked and broken up (still a bit pink)

Add the Hamburg and cook thoroughly.

Add a bit of chopped garlic, I add about two tblspoons

Don’t worry about the grease in the pan; we will add a packet of brown gravy mix which will turn that into magnificent gravy. Add now! LOL

Put the meat mixture into a casserole dish and add the corn and peas.

Add cheese to the top of the meat mixture.

Prepare a bowl with the rest of the stick of butter, sour cream, salt pepper, garlic salt (to taste) 2 eggs.

Remove the potatoes from the heat source, drain and add to the bowl and mix with a mixer. The eggs will cook in the heat of the potatoes.

Add the potato mixture to the top of the meat mixture.

Put cheese on top and cook at 350 until the cheese is melted.

Bon apetite!

I love to cook and travel. There is nothing like experiencing new cultures and of course the food. I am really happy doing charcuterie trays, this has been my new obsession for the last two years. So much creativity and fun goes into each board.

I have no formal training in nutrition or in cooking, however, I love to do it and my family reaps the benefits.

Enjoy the blog, I would love to hear from you!
