While scavenging for life’s necessities at the grocer, I stumbled upon a mind-blowing deal on an 11.5-pound bone-in pork shoulder butt for just $9. Can you believe it? I usually toss it in a slow cooker until it surrenders, but this time I’m taking a walk on the wild side and roasting it with a dry rub. I opted for the Weber Dry Rub, savory BBQ, because who has time for complex prep work?

Roasting it with this cheeky dry rub idea is nothing short of genius – and let’s be real, the Weber Dry Rub is basically a kitchen superhero. My usual slow cooking routine is top-notch for achieving melt-in-your-mouth pork but roasting it will certainly spice things up and give it a whole new attitude. Playing around with different cooking techniques is like a culinary rollercoaster – it’s wild, unexpected, and oh so fun!

For the spicy peach BBQ sauce, it is a combination of peach preserves, ketchup, apple cider vinegar, Worcestershire sauce, canned chipotle and garlic and onion. I simmered the mixture until it thickened and created a delightful and unique sauce to enhance the flavor of the meat. You can add more chipotle or less to your liking.

It is almost like a thick chutney, and oh so good!

As for the homemade buns I am so ambitiously attempting, I considered a recipe that incorporates a hint of sweetness to complement the spicy flavors of the BBQ sauce. A brioche-style bun with a shiny egg wash on top is a fabulous addition to your meal. Don’t forget to sprinkle some sesame seeds or anything but the bagel seasoning for that extra touch of gourmet! I should have picked up coleslaw mix but even without the coleslaw mix, the succulent meat and the flavorful sauce will surely stand out on their own, creating a memorable dining experience. However, if you love the contrasting texture of coleslaw, do consider preparing it for your next BBQ gathering. It’s a wonderful way to add a crunchy and refreshing element to your meal. You will need a large roasting pan for this I have one similar to this and they are not crazy expensive. Anyone who knows me knows I love to save a buck! Nonstick Roasting pan.

A scale can be helpful for the weighing of the bread. Sharp knives are a must when scoring the meat, I have this set and love them. Peach preserves are a wonderful addition to the sauce, with the chipotle.

Spicy Peach BBQ Pork

When it comes to creating a mouthwatering dish, few things can rival the satisfaction of savoring a perfectly cooked fall-off-the-bone pork butt infused with the delightful fusion of sweet and spicy Peach BBQ.

Equipment

  • Large Roasting Pan
  • Sharp knife
  • Medium size pot
  • Fry pan.

Ingredients
  

Pork

  • 8-9 lb Bone in Pork Butt
  • ¼ cup dry rub I used Webber savory BBQ Rub

Spicy Peach BBQ

  • 1 jar Peach Preserves
  • ½ cup Ketchup
  • 1 tsp Worcestershire Sauce
  • 1 tsp Apple Cider Vinegar
  • ¼ – ½ can Chipotle with sauce I used 1/4 and it brought the heat – 7.5 oz can
  • 2 med Onions chopped
  • 6 cloves Garlic chopped
  • 2 tbsp Avocado Oil

Instructions
 

  • Set oven to 450℉
  • If you have the ability weigh your meat, mine stated 11.5 lbs. and I weighed it and it was 8.5 lbs. (the store will be hearing from me) This is important, you want to cook the appropriate amount of time.
  • Pat the meat dry with a paper towel.
  • Score the fat side deep enough to get to the meat.
  • cover with your dry rub seasoning, making sure to get in the cuts.
  • Allow to rest on the counter while oven is heating up.
  • Place in oven for 30 minutes, do not open the door lower to 250℉ and cook for 40 minutes per pound.
  • Remove from oven and wrap in two layers of tin foil, place back in oven for an additional 2 hours or until an internal thermometer reaches 200℉

Spicy Peach BBQ

  • Chop your onions and garlic, using the avocado oil in a pan sauté the onions over medium heat.
  • Once the onions caramelize add the garlic. Cook for 3 to 5 minutes.
  • To a medium size pot add the peach preserves and cook over medium heat. Bring to a liquid state.
  • Add the ketchup, vinegar, Worcestershire sauce and chipotle. Cook down for about 20 minutes.
  • Add in the onion mixture and continue to cook over low stirring occasionally. Once thickened turn off heat and allow to rest.
  • Once the meat is done, place on the counter and allow to rest no less than 20 minutes, but up to an hour to allow the juices to redistribute through the meat. If you cut to early, you will lose a lot of the juice causing your meat to be unnecessarily dry.

Throw together

  • Shred your meat and either add the BBQ sauce to the mix, or to the meat as a topper. Either way I am sure you will love this recipe as much as I did.
