Red Curry Wonton Soup
Ingredients
- 2 tbsp butter
- 1 tbsp Vegetable oil
- 1 Onion chopped
- 1 tbsp Minced ginger
- 3 cloves Minced garlic
- 1 jalapeno chopped seeds removed
- 4 tbsp Red curry paste
- 4 cups Chicken stock
- 400 ml Coconut milk
- 1 1/2 tbsp Sugar
- 1 tbsp Fish sauce or 1 chicken bullion
- Lime juice from 1 lime
- 60 Mini-Wontons
- Spicy crispy chili to taste
- green onions chopped
Instructions
- Heat vegetable oil and butter in a large pot over medium heat.
- Add onion, ginger, jalapeno and garlic, and cook for 2 – 3 minutes, stirring until fragrant and soft.
- Add the red curry paste and cook for a further minute.
- Mix in the chicken stock, coconut milk, sugar and fish sauce or chicken bouillon.
- Bring to a boil then reduce to simmer for 10 minutes.
- Add lime juice, taste and season as desired.
- Boil wontons separately then transfer to soup.
- Garnish with fresh herbs, chopped green onions and spicy chili crisp
