The day started off with a busy Sunday, and I found myself rushing to Elizabeth City to check off some items on my shopping list. Meanwhile, Stephan and Mike decided to hit the golf course after enjoying a delightful brunch. By the time we all reconvened at home, I was knee-deep in trying to perfect not just one, but two new recipes in the kitchen. The delightful chaos of the day certainly kept me on my toes, but it was a fulfilling and enriching experience.

I honestly did not have the appetite for a large meal, so I asked the better half if he would mind some seafood and avocado toast. This sounded fine to him, and it was a quick and tasty meal. I love to cook, but it is hard to make a satisfying meal when you are not hungry. The small meal was a hit and very filling.

Sometimes, especially on warm summer days, a light and refreshing meal is exactly what the body craves. Seafood and avocado toast provide a delightful combination of flavors – the rich creaminess of ripe avocado paired with the delicate taste of fresh seafood. It’s a simple yet elegant dish that can be enjoyed.

The act of preparing a meal for others carries a deep sense of fulfillment and joy. It encompasses more than merely creating a dish; it involves the expression of care and affection for those who will partake in the meal. The warmth of seeing someone you hold dear savor your culinary creation is profoundly gratifying. It brings about a unique form of pleasure that resonates deeply within the heart. For some, this experience might seem unconventional, but for me, it’s an integral part of my being. Cooking for others ignites a sense of purpose and contentment that is difficult to replicate through any other activity. It’s not just about the food; it’s about the emotions and connections that are intertwined with the act of cooking and sharing a meal with loved ones.

I did add a few fried green tomatoes, since I had just just made them.

Thank you for your time and reading through my posts.

I love to cook and travel. There is nothing like experiencing new cultures and of course the food. I am really happy doing charcuterie trays, this has been my new obsession for the last two years. So much creativity and fun goes into each board.

I have no formal training in nutrition or in cooking, however, I love to do it and my family reaps the benefits.

Enjoy the blog, I would love to hear from you!
