Easy Vegetarian Pizza

Sheldon this is for you!

I want to eat more veggies and Sheldon is my guide!

Whole wheat pizza base (3 in my case)

6 oz mozzarella cheese sliced

2 tsp Garlic minced

1 sweet onion sliced thin and cooked

2 tsp virgin olive oil

1  6 to 8 oz package goat cheese

Arugula for garnish

Green onion (sliced thing for color)

Pesto (I made mine but you can buy it pre made)

Heat oven to 350 degrees

This was for three people and filling make changes based on your taste; don’t be afraid it is all about being what you want in the end!

Take your pizza base and cover in pesto. Top with the cheese base and onion. I added the green onion before cooking.

After it is melted (about 18 minutes at 350)

Remove and add some arugula at the center for pop and color.  My husband loved this and I am sure you will as well!

  1. I do something similar with Naan bread (don’t have whole wheat pizza base at my grocery store). Don’t you love pesto? A little goes a long way, and it’s so versatile.

    1. I have done this with Naan and loved it that way as well. I like the idea of using a pesto rather than a tomato base. It was very yummy. Thank you for the comment!

  2. This looks so good! And so much fun, too because you can get so creative with the toppings! I’ve made mini pizzas before with goat cheese, lemon zest, and asparagus tips but this looks fantastic. I’ll have to try it out! I like how you did the pictures in a slide show format, very cool!
