Carne De Res Barquitos

It is always enjoyable to try to find a meal that is simple fast and a bit off the wall.  As the name implies, it is Beef filled boats, I would have used baguettes for this one, but with our daughter getting braces recently I wanted to have the softer bread for her.  Although she insisted that I bake it to make it a bit crispy on the outside. So I won’t change the recipe, it will still call for baguette bread.  If you like the bread I used it was simple deli bread not precut. Although this really smelled spicy (So Stephan said, it really was not, it had a backhand kick but really in a good way and he agreed) another successful meal. I love when Stephan praises my cooking, can’t tell you how wonderful it is to have him ask me if I am truly happy =) How can I not be?  Enjoy the recipe!

You will need

1 ½ lbs ground beef

1 medium onion diced

3 cloves of chopped garlic

1 tbsp chili powder

2 tsp ground cumin

2 teaspoons sugar

2 jalapenos seeded and diced or 2 chipotle peppers for a little more heat

3 tomatoes diced

1 cup shredded cheddar cheese

2 6″ baguettes

 

In a large pan over medium high heat add some butter and stir in the onions (I find that cutting onions is way too emotional, I cry every time!) jalapeno and garlic until translucent.

Add the beef and brown  using a wooden spoon to break it apart as it cooks. When the meat is almost cooked through (about 10 minutes)

add chili powder, cumin, tomatoes and sugar. Reduce the heat to medium and cook for 10 minutes or until the mixture thickens.

While the mixture reduces slice the baguettes in half length-wise and scoop out a little of the bread from the center of each half.

Once the mixture has reduced and is thick spoon equal amounts into each of the barquitos or boats and top with cheese before serving.

You can serve this with a side salad, but after making it I thought that would have just been too much! Great comfort food right here and pretty quick and easy to make!
