Yes that’s right, why stick to the original lasagna when you can get all Mexican and have a taco lasagna.  I used low carb tortillas and they worked beautifully with this recipe. I know this is nothing new, but it is a great one to share, and I don’t think I have ever made it myself before.  I know of friends who have made this and raved about it, so I figure why not give it a whirl.  I skipped the black beans to keep it low on carbs, even so it was very tasty.  If you feel so inclined add the beans and whatever else you deem necessary to make it all your own.

You will need tortillas

1 lb 93% ground beef

1 red onion chopped

½ green pepper chopped

½ red pepper chopped

fresh salsa

1 package taco seasoning

¼ cup water

Shredded cheese taco flavored or sharp cheddar

Sour cream

Black and green olives

Green onions chopped for garnish

1 tomato sliced

Cook the beef on medium high heat, add the taco seasoning and water.

Add the onion and pepper mixture at this time as well.  Allow the liquid to cook away (evaporate)

In a pie pan, layer tortillas on the bottom, cut and place so it is all covered.

Cover with meat mixture, salsa then cheese.  Place another layer of tortillas, meat, salsa and cheese. Layer the last tortilla on top, cover in cheese black and green olives and the tomatoes as well. Back at 425 for 15 – 18 minutes.

Top with sour cream and green onion. I added some avocado and it was pretty much amazing! I guess you could add a ton of extra items, corn, beans, refried beans cilantro.  Get creative!
