Sweet and Tangy Swai with Mashed Cauliflower and a side salad

 

 

Takes about 20 minutes to cook very easy and boy was it tasty!  The weather here has been so incredibly beautiful, decided to eat outside and take pleasure in the weather.

I was only cooking for the hubby and myself so you can absolutely double this for four easily.

2 swai filets

¼ cup of the following items

Olive oil

Apple cider vinegar

Honey

1 tsp Dijon whole grain mustard (I left this out for a more sweet taste)

½ tsp dried dill weed

Salt and pepper to taste

Mix together the oil, vinegar, honey, mustard and dill together. Arrange the fish in a baking dish and pour the mixture over the fish. I salted and peppered the fish before adding the mixture. Bake at 350 degrees for about 20 minutes or until the swai is flaky.

Serve with a salad and mashed cauliflower

For the cauliflower boil a small head of cauliflower in salted water, drain when soft and mash the cauliflower with a pat of butter and two spoonfuls of sour cream some of the dill and a bit of garlic.

 

I made a nice spinach salad with roma tomato, green onion, mozzarella cheese and these great Walden Farms dressings that are calorie free.
