I’m not sure how I come up with some of these recipes every now and then. I know that cooking on a dime and using what’s on hand for so many years has helped me learn to develop flavor, but I still throw things together and think WOW that really worked. Such as this little number, at this point in the writing I am still trying to think of an appropriate moniker for it. It’s amazing how creativity in the kitchen can be sparked by the simplest of ingredients. Sometimes, the most delicious meals come from improvisation and experimentation. I like to stuff chicken, and bacon goes with everything nowadays, bacon ice-cream, bacon candy, bacon in your drink (yes that’s real), Bacon, bacon, bacon… What’s so great about wrapping chicken in the bacon? The bacon creates a lot of moisture and gives the chicken a ton of added flavor. The crispiness of the bacon, (because; admit it, if that bacon is limp, we won’t even go near it!) makes a great contrast to the chicken and the filling. When you combine the succulent juiciness of the chicken with the smoky, savory flavor of the bacon, it’s a match made in culinary heaven. As the chicken cooks, the fats from the bacon are absorbed into the meat, infusing it with rich, indulgent taste. Stuffed Bacon Wrapped Chicken

Ingredients
  

  • 1 block of cream cheese at room temperature
  • 4 sticks of cheddar cheese you know the kind that look like string cheese snacks
  • Some salsa leftover and needed to be used
  • Chopped green onion 2
  • 1 onion chopped
  • Fresh cilantro ¼ bunch
  • Peas optional
  • Fresh dill I love dill but this can be omitted
  • BACON 1 per chicken and three extra to use in our sauce for the pasta
  • ¼ cup flour
  • 1 cup milk
  • ¼ stick butter
  • 4 chicken breasts pounded flat put in a zip lock bag and pound them out
  • Linguini cooked as the package states.
  • Salt and pepper

Instructions
 

  • Pre heat the oven to 350
  • Mix the cream cheese, salsa, cilantro and green onion together. Place a spoonful and one cheese stick broken up on your chicken and wrap.
  • Wrap with one piece of bacon and salt and pepper the chicken
  • Cook in a preheated oven at 350 until the juices run clear and the bacon is crisp. About 30 minutes
  • While it is cooking take your three extra pieces of bacon cut them up small and cook over medium high heat until just crispy, add the onion and cook through until soft.
  • Remove the onion bacon mixture and throw that butter in there, once the butter melts add the flour and stir to create the roux for the sauce.
  • Slowly add your milk stirring at all times, until it thickens up.
  • Add the peas and dill then toss with your pasta.
  • Serve the chicken over the pasta and there you have it, stuffed bacon wrapped chicken.

  1. Looks great. I love wrapping chicken breasts in bacon. We do a stuffing of spinach, ham, swiss cheese, mushroom and onions.

    1. That’s sound amazing. I think I have stuffed just about anything you can think if into or wrapped in chicken. Lol.
