Slow Cooker Pulled Pork Salad

This makes a significant amount of pulled pork, I used it for a salad, and the next day we can have pulled pork burritos.  It is also great as a take along dish that can be eaten cold at work or on the go.  The pork does not have a sauce in it, so it is very easily changed to suit your individual needs.  This is probably one of the easiest meats to cook, and I get the most compliments on it when I do it.  Try it out and wow everyone you give it to.

I use a pork shoulder picnic roast that I get at Wal-Mart, it is tied in a net. I don’t know why but this one out of all of them has had the most flavors and always creates a juicy end product.  If you have an aversion to shopping at Wal-Mart then I would suggest getting the pork shoulder anywhere else (you will pay more) and use that. Either way the pork is so very good when it is finished.

This is so easy but takes time, so start the night before.

 

1 onion chopped

2 teaspoons of minced garlic

Montreal seasoning blend, you could use any of the seasoning blends oyu like. I find just salt and pepper tend to be a little bland.

¼ cup honey

32 oz chicken stock]

32 oz vegetable stock

In a slow cooker place the meat, add the stock to cover.

 

Add the onions and honey and seasoning, cover and cook on low over night. I leave it on low for the duration of the next day while I am at work. Once I get home I turn it to high for about two hours or so.

The timing is not set in stone, so when you are ready to serve your pork just pull it out and using 2 forks shred it.  I will add a bit more seasoning at this time but that is up to individual tastes.

Now should you want to make the pulled pork salad you will need,

Shredded lettuce

1 tomato chopped

Sour cream

shredded cheese (I used taco seasoned)

Scallion chopped

A few sweet peppers chopped

Minced garlic (1 teaspoon)

1 can chopped tomatoes with green chili’s

1 onion for the pepper medley

1 pat butter

In a sauce pan melt the butter; add the garlic, onion and the bell peppers. Once cooked until soft add the tomatoes. Allow the juice to cook off.

In a plate add lettuce, the bell pepper mixture, pork, tomato, sour cream scallions and a bit of cheese. ENJOY!

You could add corn and whatever else you think of to make this all your own!

I love making this, it is fresh and filling and oh so delicious!  My family loves this recipe, and to be honest the pork never lasts for more than a few days in our house!

  1. Thanks for the link Laura! I love shopping at WalMart! Their prices are great & I’ve never had a problem with quality. And I agree that the pork shoulder is the way to go!
