Brussels Sprouts with Bacon and Thyme

This is adapted from a recipe on Epicurious.com, I however added a few changes. The people I served this with  were from Europe and did not like Brussels Sprouts, but to my amazement they said this is the first time they enjoyed eating the little green buggers! *Insert grin here* I love brussels sprouts and this was an easy and tasty way to serve them. PS they make a great snack the following day cold!

 

Ingredients

  • 1 1/2 lb Brussels sprouts, trimmed and halved (quartered if large)
  • 2 bacon slices, finely chopped
  • 1 teaspoon chopped fresh thyme
  • 1 tsp minced garlic
  • 1 shallot sliced thin
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • a pat of butter

Preparation

Cook Brussels sprouts in a 4-quart pot of boiling salted water until crisp-tender, about 6 minutes, then drain in a colander. Cook bacon in a 12-inch heavy skillet over moderately high heat, stirring, until browned and crisp, about 2 minutes. Reduce heat to moderate and stir in Brussels sprouts, thyme, garlic, shallots, salt, and pepper, then cook, stirring, 3 minutes. add the butter and stir just before serving. YUMMY
