Baked Spaghetti

Ok as we may all know Tuesday was a busy evening for me (see previous post) so making the meal was on the fly..  Here we have Baked Spaghetti, a real quick and tasty meal that you can make when time is slipping away!

 

1 lb of dry spaghetti (1 used half a box)

4 cups simple tomato sauce (recipe follows)

2 cups grated mozzarella cheese (1 bag shredded)

8 oz ricotta cheese

2 egg

Parmesan cheese for sprinkling

 

Cook the pasta in boiling salted water according to the package direction and drain. Do not rinse the pasta.

 

While the pasta is cooking combine the ricotta, mozzarella, egg, and simple tomato sauce in a large bowl.

Once the pasta is cooked mix it thoroughly with the tomatoes and cheese mixture then pour it into a greased 9×13 baking dish. Top with parmesan cheese and bake in a pre-heated 350 degree oven for 20-25 minutes or until the cheese begins to brown on top.

 

Simple Tomato Sauce

Prep time: 5 minutes

Cook time: 10 minutes

Serves: 4

2 tbsp olive oil (pantry)

½ cup diced onion

3 cloves of minced garlic (pantry)

2 28 oz cans of diced tomatoes or 5 cups of fresh tomatoes diced

2 tbsp dried basil (4 tbsp if using fresh) (pantry)

 

Heat the oil in a medium pot over medium heat. Add the onions and sauté for 3 minutes before adding the garlic.

Allow the onions and garlic to sauté for 1 additional minute before adding the remaining ingredients. Reduce the heat and simmer for 6-8 minutes.
