So today was a busy Sunday, I ran to Elizabeth City to get some shopping accomplished, and Stephan and Mike were golfing after we had a bit of brunch. Needless to say by the time we were both home, I was knee-deep into two recipes.
I honestly did not have the appetite for a large meal, so I asked the better half if he would mind some seafood and avocado toast. This sounded fine to him, and it was a quick and tasty meal. I love to cook, but it is hard to make a satisfying meal when you are not hungry. The small meal was a hit and very filling.

There is something deeply satisfying about cooking for others. The appreciation of a person you love or care for is wonderfully satisfying. At least to me, it is! I could be the quirky one here…..
I did add a few fried green tomatoes, since I had just just made them.
