Stuffed Pepper SOUP!!

I know, Stuffed Pepper Soup, how does that work????  I had all the ingredients’ to make stuffed peppers for dinner. It was on my recipe list for the week, and I was sticking to all the recipes.  I, however, have had a lengthy week so far and the prep work and time to cook it was not something I was particularly looking forward to. My one and only though was, what can I make that will be easy, and use all the same ingredients’.  Why not put it all into the pressure cooker and add a bunch of broth and see if it turns into a great soup?  I honestly thought that it may turn into a kind of pressure cooker meat loaf and had that happened I would have worked with it, Thank God I did not have to worry. The flavors were wonderfully balanced and the soup was delightful!

This recipe calls for the following; this made enough for me to take to work and share the next day.

1 lb ground beef

½ lb ground pork

½ lb ground lamb

3 red peppers chopped

2 onions chopped

1 bunch of cilantro chopped

32 oz container of vegetable broth

3 tablespoons minced garlic

3 stalks celery chopped

1 cup lentils

½ cup sour cream

Shredded Parmesan cheese (for garnishing)

Combine all of it in the pressure cooker and cook for 25 minutes at 70% pressure.

Mix in the sour cream when ready to serve and top with a bit of cheese.

This came out so good! I am content with the amount of time I saved and how great the soup tasted in the end. =)  I truly love it when a recipe comes together.
