Deconstructed Taco ~ good for you!!!

So we went away this weekend to North Carolina.  We really enjoy this area, and will be building a home there one day.  We go there whenever we can to spend a quiet weekend together, watch the sun rise and set, play golf and be one with each other. So with that thrown out there, we got home about 6 on Sunday, and I had to fling together a fairly quick meal. We were going to be Skyping with some very good friends at 8 so I was on a time crunch.

I have been experimenting with the “low carb” Meals. Our son is on the Low Carb lifestyle (which is working great for him) and I like to have meals for him to use to break up the mundane salad every day. What I came up with was this “deconstructed” Taco.  I guess it could be considered an actual taco salad; but what fun is in that name??  I really should have left the ingredients in small piles to really consider it a deconstructed taco, but we won’t worry about that.  You can do it if you like!

 

This took about 15 minutes to prepare, and another twenty to cook.  I used the small muffin pans, you could use regular sized ones, just adjust the cooking.

This makes a lot of the beef cups, but I had them for lunch with a salad again and they were just as good the second time as they were the first. You could feed four or more depending on the quantity you gave each plate.

You will need;

1 lb ground beef (93% or higher)

1 package taco seasoning (I used fajita seasoning I like the added zing)

1 head of lettuce chopped

1 large tomato chopped

Shredded cheese taco flavored

Sour cream

Green onions chopped

1 med white onion chopped

1 large green pepper chopped

1 med red onion chopped

Black beans (1 can)

Several small peppers (sweet) chopped

1 small bag of pre cooked (crumbled bacon)

2 eggs

2 tbsp minced garlic

1 pat of butter

Cooking spray for the tins

Cook the onions, garlic and peppers in a pan until they start to soften (about ten minutes)

In a separate bowl add the egg, seasoning and meat, once the vegetables have softened add to the bowl and mix, incorporate the bacon as your mixing.  Spoon into the tins, and cook at 425 for 20 minutes.

On a plate layer some lettuce, black beans and add the meat. Top with the tomato, green onion and cheese. I added a dollop of sour cream on the side.

The warm and cool elements made for a very refreshing dinner indeed.  I am pretty sure this is a really low carb meal and should be ok for the low carb lifestyle, or even the slow carb lifestyle.  I am sorry the pics are not great, was not really thinking of blogging it until I started. Not knowing where the meal was going I had no idea what the outcome would look like.  Over all it was again very tasty.
