Seared Scallops with Hollandaise Sauce

This was such an easy meal I did not even take pictures to show how it is made, but once I was done I wish I had.  This although so simple and straightforward; was an elegant and tasty meal.  Something so simple yet it was diverse in flavor and texture.  A real keeper.

Making your own hollandaise sauce is not hard and as a matter of fact most people have all the ingredients in you possession and can do it at any time.  I this much tastier  than the  store purchased product or making it from a powder (I am guilty of this yes for sure)

The scallops have a simple pepper salt sear on them, the asparagus is steamed and then just topped with the sauce, I put the scallops on a bed of fresh spinach, what holds it al together is the sauce.

Blender / Food Processor Method

  1. Pour the egg yolks, lemon juice, cayenne pepper, and salt into a food processor and blend everything for 20 to 30 seconds.
  2. Slowly drizzle the butter into the processor until all of the butter is incorporated.  Keep blending until the hollandaise sauce is thick and creamy.

Hand Whisk Method  {My husband makes the sauce this way and it’s delicious and amazing!}

  1. Pour the egg yolks, lemon juice, cayenne pepper, and salt into a medium sized bowl and whisk everything together for 1 to 2 full minutes {whisk as fast as your arm allows}.
  2. Slowly drizzle the butter into the bowl in batches.  Pour butter, then whisk for a bit.  Pour more butter, then whisk for a bit.  Keep repeating until the butter is gone.  Continue to whisk the mixture until it becomes thick, creamy, and frothy {approximately 3 to 4 minutes}.

    Oh my goodness, this looks delicious! Now all I want is to make the Hollandaise sauce for this dish! Haha! How has it not occurred to me to use it on my all time favorite – scallops!!! 🙂 Thank you for the link back Laura. This is definitely going on our meal list for next week!
