I love Stuffed Peppers; and they can be pretty easy to make, I was just in the mood for doing something like this but had no recipes handy nor did I know of one by heart. So this is what I thought would taste good and I figured I would share it. Please make changes as you like and use this as a starter recipe.
For this recipe you will need one seeded green pepper per person
3 large tomatoes chopped (in a possessor is best)
1 jalapeño pepper chopped
1 lb ground beef
2 tsp olive oil
Shredded cheese (any kind is good)
Salt and pepper to taste
Dried oregano
Chili powder (to taste)
Quinoa cooked according to the package
1 large onion chopped
2 cloves chopped garlic
Cook the onions in a bit of olive oil until soft, add the garlic and continue to cook until browning. Add the meat and cook through.
Cook the quinoa and add to the mixture.
Add salt and pepper and chili powder to taste, mix and stuff the peppers cook for 30 minutes covered with tin foil. Remove foil and top with shredded cheese, cook until browned.
Cut in half and serve with sour cream.
