I love tofu, and it is a great substitute for meat and pasta. Here is a really easy mac n cheese made with tofu rather than the high calorie macaroni. This version is very creamy and cheesy; you can substitute any cheese you like. I used bacon infused Gouda; this gave the dish a nice smoky flavor!
1 package firm tofu
1 package flavored cream cheese (for cooking)
2 cups shredded cheese (whatever kind you prefer)
Optional you can add a firm cheese such as Gouda to the recipe.
Salt and pepper to taste.
Panko bread crumbs garlic flavored
a few pats of butter
Cut the tofu as follows;
Place in a baking dish sprayed with olive oil. Add the cream cheese, and cut cheese with one cup of the shredded cheese along with the tofu. Mix well, salt and pepper to taste and cover with the remaining cheese. Top with the panko bread crumbs and a bit of butter. Bake at 350 for 30 minutes, or until the top is brown and crusty.
Very easy and cheesy!
