Well I had a very busy day yesterday, and I had to meet a contractor at six, so I was short on time for a nice meal at home. Using what I had handy I made these yummy chicken nachos.
Chicken breast (I used 4 small ones)
1 22 oz can diced tomatoes (don’t drain)
½ purple onion
Shredded Mexican cheese
Small corn tortillas cut into fourths
Shredded lettuce
Chopped green onion
Olive oil cooking spray
Minced garlic (about 2 teaspoons)
½ tsp cumin
1 tsp chili powder
½ tsp allspice
¼ cup fresh chopped cilantro
Salt pepper to taste
Boil the chicken Breast in salted water until cooked through.
Remove the chicken salt and pepper it then shred it with two forks.
In a high pan add the chopped tomatoes, garlic, onion, chili powder, cumin, allspice and cilantro; cook over med high heat.
Take the corn tortillas and spray with the oil, broil on high until crisp. This makes a great tortilla chip without the fat from frying them.
Add the shredded chicken to the tomato mixture.
Layer the chips on a plate, top with cheese, some lettuce, and the tomato and chicken mixture. Add more cheese and garnish with sour cream and green onion.
This took maybe 20 minutes to cook, was fast and easy!
