Chicken Nacho’s

Well I had a very busy day yesterday, and I had to meet a contractor at six, so I was short on time for a nice meal at home.  Using what I had handy I made these yummy chicken nachos.

Chicken breast (I used 4 small ones)

1 22 oz can diced tomatoes (don’t drain)

½ purple onion

Shredded Mexican cheese

Small corn tortillas cut into fourths

Shredded lettuce

Sour cream

Chopped green onion

Olive oil cooking spray

Minced garlic (about 2 teaspoons)

½ tsp cumin

1 tsp chili powder

½ tsp allspice

¼ cup fresh chopped cilantro

Salt pepper to taste

Boil the chicken Breast in salted water until cooked through.Boiled chicken to be shredded

Remove the chicken salt and pepper it then shred it with two forks.

In a high pan add the chopped tomatoes, garlic, onion, chili powder, cumin, allspice and cilantro; cook over med high heat.Tomato base

Take the corn tortillas and spray with the oil, broil on high until crisp.  This makes a great tortilla chip without the fat from frying them.  Baked tortilla chips (no salt)

Add the shredded chicken to the tomato mixture.

This took maybe 20 minutes to cook, was fast and easy!
