This meal takes about 45 minutes to cook, half is prep and the other half is cooking times. This will feed 6 or more. I like my food a bit on the spicy side so this had a bit of a kick but not too bad. This was so good with some rice and a portion of bread. MMMM YUMMY!!
1 lbs. medium shrimp… peeled and deveined
1 green bell pepper… cubed
1 sweet onion… cubed
4 ribs celery… cut into bite size pieces
2- 28oz. cans diced tomatoes
2 bay leaves ( I used crushed bay leaves about a tsp)
2 Tbsp. seafood seasoning
2 Tbsp. garlic… chopped
4 C. white rice… cooked
2 Tbsp. olive oil
1 Tbsp. cayenne pepper
Salt, pepper, and hot sauce to taste
Depending on how spicy you like your food you may want to try just a teaspoon of cayenne pepper and taste it before you add the full tablespoon.
Heat olive oil in a large stock pot over medium heat. Sauté the onions, peppers, bay leaves, and celery for 4-5 minutes
before adding the garlic, seafood seasoning, salt, pepper, hot sauce, and tomatoes.
Boil for 10 minutes until reduced.
Add the shrimp, reduce heat to low, and simmer for about 5 minutes or until the shrimp turn pink. Remove the bay leaves and serve over rice.

This looks very delicious! Dinner for tomorrow then as I still have shrimps in the freezer and the rest of the ingredients are in my cupboards. Thanks a lot for this recipe.
