Perhaps you are familiar with the fact that… I hate to measure anything and I try to use what’s on sale to produce a meal with what I have on hand in the house. When I went shopping the other day I was able to get 93% fat-free Ground Beef. Today I wanted to put together a substantial meal that would appeal to everyone and not cost me another expedition to the store.
What you will need;
4 or 5 eggs
1 16 oz bag of Fresh spinach
Salt / pepper, chopped garlic
1 can of chopped tomatoes (I used the flavored kind)
1 package of white wine and herb marinade (found in the gravy section) Any seasoning packet would work.
Oil or butter
Brown hamburger with onions and seasonings (pepper, salt and chopped garlic).
Drain (or not) depending on the degree of saturation you have for your meat, the higher the less oil. I don’t drain. Drop 5 eggs into the hot mixture scrambling them into it.
When the eggs are done, throw in a whole bag of fresh baby spinach (reserve a handful for garnish if you like in the pasta), with the pan I used I had to do a handful at a time then cover and wait till they wilted before doing more.
The whole bag will fit. Cook and stir until the spinach is wilted. Stir in the tomatoes with the juice and the packet of seasoning. Stir and keep bubbling at a medium high heat. Once fully integrated, turn down and allow thickening.
Boil the egg noodles, when done add the chopped spinach (if you reserved it) along with some pepper and salt and butter or oil.
This was a very flavorful creation that cost maybe 3 dollars per person. And we had some left over’s. I will be making this again. Cook time was about 35 40 minutes.
