Baked Cod with a Dill & Caper Emulsion

If you like fish( or not), this is a great recipe, Cod is a great introductory fish to a family who may not have the feel for the consumption of fish.  It is a popular saltwater fish that is mild-flavored, lean with firm white meat. It is also an excellent low-calorie source of protein; a great alternative should you be looking to change up your meat rotation during the week.  I have been trying to do a bit of all meats and fish so we can have a variety of foods. This particular recipe is fast and uncomplicated and would be great for a day you don’t have a ton of time.  The whole meal can be presented in about 25 minutes.

1 tablespoon olive oil

1 1/2 pounds cod fillets

salt and ground black pepper to taste

4 tablespoons chopped fresh dill divided

1/2 cup sour cream

2 tablespoons capers, drained and rinsed

lemon, zested

1 lemon, cut into wedges

¼ cup olive oil

Preheat oven to 425 degrees F. coat your baking sheet with olive oil.

Season the fillets  with salt and pepper and arrange fillets on prepared baking surface.

Bake in preheated oven for 10 minutes and sprinkle evenly with dill. Continue baking until fish flakes easily with a fork, about 2 minutes more.

Stir sour cream, capers, olive oil, dill and lemon zest in a bowl; season with salt.

Serve fish with a nice salad include lemon wedges and sour cream caper sauce. I put a bit on the fish and on the side for dipping.

Baked Cod over Spaetzle with a side of Haricot Verde

Fancy fancy, as I said in my previous post; I had this for dinner at a great café the other day and really could not wait to make it myself. The first step the Spaetzle should be made first. Click here to get the recipe. The fish and Green beans will cook about the same amount of time. So once the Spaetzle is completed you can start he fish and green beans.

Wash and pat dry your fish; preheat the oven to 350 degrees

You will need a cup of mayonnaise

½ cup panko

Salt and pepper to taste

The juice of a lemon

½ stick of better melted

Parsley for garnishment

Preheat oven to 450 degrees.. In a bowl, mix the  mayonnaise, salt/pepper and lemon juice together.

Pat the cod dry with paper towels; Lay the cod in a 9 x 13 baking dish sprayed with cooking spray.
Brush the tops and sides of the fish with the mayonnaise mixture.
Sprinkle and press the crumbs into the mayonnaise add a little pepper and drizzle butter over the filets.

Bake on middle rack until the crumbs are golden brown and the fish flakes apart when gently prodded with a knife, about 15 minutes.

See all the wonderful juice from the fish, this is what we will use to flavor our side dish.
Top with parsley Serve with lemon wedges if desired

For the beans, steam them and when finished toss the beans in the juices from the fish.  Delicious!!!   I hope you enjoy this meal as much as we did; the fish was sooo tender and flavorful.  The beans lended a really nice texture to the otherwise buttery fish and Spaetzle.

Ginger Sesame Swai

Swai is a white-flesh fish (typically available in fillet form) with a sweet mild, taste and light flaky texture that can be broiled, grilled, or coating with bread crumbs and fried, according to experts. It can be prepared simply, but also takes well to sauces. A 3.5-ounce serving of plain fish contains around 90 calories, 4 grams of fat (1.5 saturated), 45 grams of cholesterol and 50 milligrams of sodium. Not bad. *

I Love eating fish and hope to do a lot more this summer.  Swai is the choice at this time because it is readily available and really does cook up well.

What you will need for this tasty little number is

1 lb swai or tilapia

4 tsp olive oil

4 tsp rice vinegar

3 tsp light soy sauce

2 tbsp minced garlic

½ tsp dried ginger

Sesame seeds (I just shook the seeds over the fish so not sure how much would be needed)

Spray a broiler pan so the fish won’t stick salt and pepper the fish on both sides and place on the broiler. Whisk together the remaining ingredients with the exception of sesame seeds. Pour over the fish and shack on some seeds. Broil on lo about 8 inches from the heat source for 20 minutes or until white and flaky.

This would be great with a salad, or some lemon rice.  I served with the previous recipe of Butternut and apple soup.

Fish Piccata

This takes about 20 minutes total to cook and was simple and elegant.  I am trying very hard to incorperate more fish and seafood into our diet. I served this with white rice that I just added  some lemon zest to with salt and pepper.

2 tablespoons olive oil

4 small white fish fillets (such as tilapia or sole), about 1 pound total

Kosher salt and freshly ground black pepper

1/4 cup flour

1/4 cup white wine

2 lemons, juiced

2 tablespoons capers

2 tablespoons butter

2 tablespoons chopped fresh parsley

Heat the olive oil in a large saute pan over medium-high heat. While the pan is heating, blot the fish dry with paper towels and season with salt and pepper. Dredge in the flour, shaking off any excess. Saute the fish in the oil until just cooked through, about 4 minutes, flipping halfway through. Remove the fish to a platter. Deglaze the pan with the white wine, whisking for about 1 minute. Add the lemon juice and capers and stir. Add the butter and stir or whisk to incorporate to bring the sauce together. Pour onto the fish and garnish with the chopped parsley.
